Not easy by any means at default settings, but easier. Use all these things and handling zombies becomes easier. Also there are conditions in which they have a harder time seeing and hearing you, like during rain storms for instance. The trick is to use objects to line of sight as much as possible. If you are just crouched in the open you are still quite visible.

I will say I don't change the zombie options anymore, because you will get the hang of it and be able to deal with it for the most part. I tune some things higher and some lower just to tune things to a point where it's still a challenge, but isn't ridiculously hard either. Hell I pretty much never play the preset settings. There's no shame in tuning to a level that you find enjoyment in. Or just use sandbox settings and decrease the amount of zombies.
